Easy, Quick, Tangy Cole Slaw

I love cole slaw.  I eat a variety of cole slaws, but this one is super easy and super quick. This is how my mom makes it whether she is in a hurry or not and it is the recipe I grew up eating. As an added bonus, this is very cheap to make. This recipe is made with Miracle Whip, but feel free to substitute mayonnaise. This recipe is the only thing I ever use Miracle Whip for. Also, this recipe includes pineapple which, to me, is an essential ingredient in a good cole slaw.

Basic Cole Slaw

Ingredients

  • 1 head of cabbage, shredded
  • 1 carrot, shredded
  • 1 cup Miracle Whip
  • 1 8oz can of pineapple (diced or chunks)
  • 1 tbs pineapple juice (left over from the can)

Directions

  1. Mix all ingredients (You may want to add the Miracle Whip in slowly so you can adjust the amount to your taste.)
  2. Refrigerate for at least an hour.
  3. Enjoy.
